Heather's Crab n Cheese Eggrolls

Have you ever had crab and cheese fried wontons from a chinese place? I love those things. So I decided to make them into egg rolls. I am sharing my recipe with you. Please be aware that all Heather recipes do not require you to be exact with the ingredients. Move things around however you see fit.

You will need,

32 oz of imitation crab meat
2 blocks of cream cheese
8 Napa Cabbage Leaves
4 Green Onions
3 tsp Ginger (fresh or in a tube)
3 tsp Garlic (fresh or in a tube)
3 tbl Soy Sauce
Egg Roll Wraps
1 Egg
Oil


First you want to get a big mixing bowl. Chop the green onions and cabbage into fine slices and place in the bowl. Then cut the cream cheese into small cubes. You also want to chop the crab meat into small pieces and add it to the bowl. Add the ginger, garlic and soy sauce. Mix it all together. You might need to use your hands to squish the cream cheese into the other ingredients. Since there is no raw meat you can let your kids help with this part. It should look like this


Now you will want to make an egg wash by beating an egg with some water. Put it in a little bowl next to where you are working. Take an egg roll wrapper and put a good amount of filling into it. You will want to fold the sides in then the bottom up. Finally top a little of the egg wash onto the top of the wrapper and roll it all up. The following pictures will show you what I mean.



Stack all of your uncooked egg rolls neatly making sure the part sealed with the egg is facing up and has time to dry before you add another layer. it only takes a min or so.



Fill a frying pan with about half an inch of oil. Let it heat up. Test it by slowly lowering a egg roll into the oil and once it starts to fry it should be ready. Depending on the size of your pan you might be able to several at once. I normally do 5 egg rolls at a time. Watch for the edges to brown and then flip them. Be careful not to let the oil splash out. Make sure your oil doesn't get too hot or you will burn them. Once your egg rolls are cooked, removed them and put them on a cooling rack over some paper towels. Placing them on the cooling rack will allow the oil to drain off so you wont get greasy egg rolls.


Serve your egg rolls with some duck sauce, soy sauce, Chinese mustard or other dips you may like. Rice, soup, vegetables all go well with these as part of a meal.  You can also use the mixture for other things such as mixed with pasta for a nice pasta salad. If  you remove the cabbage you can make fried or steamed wontons with it.

Egg Rolls are fun to make and eat. Once you master making them you can make them with anything you like. Last nights chicken with some cabbage and bean sprouts will make a whole new meal when turned into egg rolls and served with rice and steamed vegetables.
